All week we work so damn hard that frankly, it’s nice to have an inspired night out and just be in a beautiful place, enjoying good drinks and great food. It almost goes without saying, that atmosphere plays a big part in the dining experience for us. There’s nothing like spending time in visually appealing spaces that make you feel like you’re on vacation in your own city.
We’ve compiled a list of 10 of the most chic and stylish bars and restaurants to enjoy in the 604.
1) D/6 BAR AND LOUNGE AT PARQ CASINO
The whole idea behind the Parq Casino was to bring a “Vegas” feel to Vancouver and they’ve done a good job. The interior design is absolutely beautiful and we fell in love with a newly minted bar on the property called D/6.
In order to enter this contemporary space, one takes a glowing elevator to the 6th floor and is greeted by friendly staff inviting one into the lounge. Inside is an open space with different areas, each one giving off a different vibe. My favorite one consists of classic elements, such as wood bookcases and a pool table. The rest of the decor boasts royal blue hues mixed with soft tones making it quintessential modern design. They offer an array of choices in handcrafted cocktails, carefully chosen wines, and unique small bites.
If one peeks outside one can spy a new rooftop patio that is said to feature dramatic views of the city. It’s set to open in a few months and I’m sure will be one of the hottest spots come Summer. D/6 is definitely worth checking out. Visit here
2) BOTANIST RESTAURANT LOUNGE AT FAIRMONT WATERFRONT HOTEL
Walking into Botanist is like walking into a breath of fresh air. It’s bright, with neutral tones and tons of greenery; 50 different plant species to be exact. It features a bar, outdoor terrace garden, a vibrant dining room and a champagne lounge. This is a great restaurant to enjoy an early lunch, have a one-on-one business meeting or to enjoy with friends. The menu is fabulous and we love that they offer green juice options and every basic bitch’s favorite: avocado toast. The entire menu is as organic and fresh as the interior. This restaurant is a very unique spot and somewhere we would recommend spending an afternoon.
3) NIGHTINGALE RESTAURANT
Going on first impressions, we liked the subtlety of Nightingale in that one could easily walk by and not notice it, giving it hidden gem appeal. Upon peeking inside, one will find a gorgeous restaurant with a very classic but warm decor, a mix of feature walls, and dark mahogany colored stools. It also features an eye-catching bar and fireside seating. The restaurant has two levels with the upper offering welcoming booths. Not only is this restaurant visually appealing but the food and drinks are up to par. It has casual dining options including pasta, pizza, salads and veggie dishes. I enjoyed a roasted pepper, castelvetrano olive, eggplant, tomato, and basil pizza with a Nightingale martini on the side. Visit here
4) THE CHAMPAGNE LOUNGE AT TRUMP HOTEL
Don’t shoot the messenger, but the Champagne Lounge at the Trump Hotel has probably some of the best drinks we have ever tried. A cool, stylish, relaxed atmosphere with shades of grey, teal, and gold. Some of the highlights include the Blood and Champagne, Clover Club, French 75, Blood and Sand, Inherent Vice while the most unique cocktail has to be the Scentless Apprentice as it comes presented on a vanity tray with a perfume bottle and cologne foam spooned tableside. 5) PROHIBITION AT THE ROSEWOOD HOTEL GEORGIA
We’re fans of pretty much everything offered at the Rosewood Hotel Georgia, as it has a very swanky feel. One has the choice of the beautifully lit rooftop lounge experience at Reflections, sitting in the chic 1927 lobby lounge, or being in the basement and going back into time to the American prohibition era of the 1920’s. It’s exactly how the lounge describes itself with live music, a sleek interior and sophisticated ambiance, as the lounge takes a page from the era’s speakeasies. This is a truly rare encounter and the drinks are outstanding with a mix of innovative and vintage cocktails. If your in the market for a strong drink just ask for the Hotel Georgia, they’ll know. 6) MOSQUITO DESSERT AND CHAMPAGNE BAR
We feel like Mosquito would be a regular spot for Audrey Hepburn, in that it is a nice, small, sweet, stylish location to enjoy the more decadent things in life. Mosquito is nestled in the Gastown area and although known for its champagne and dessert also serves cocktails, beer, cheese plates and other small bites. It’s truly an exquisite experience. It’s a great spot to enjoy solo on a rainy Vancouver day or with a new beau. Visit here
7) HAWKSWORTH RESTAURANT
As we mentioned, we love anything and everything at the Hotel Georgia, so you guessed it! We included Hawksworth Restaurant! It takes the cake as one of the premier restaurants in the city as it is the epitome of elegance and glamour. This restaurant is owned by lauded Chef David Hawksworth just like Nightingale. It’s a five-time winner of Best Upscale Restaurant in Vancouver Magazine’s Restaurant Awards and is located in the heart of the city at Georgia and Howe Street. Visit here
8) LIFT RESTAURANT AND LOUNGE
Lift is one of our favorite spots if the sun is out or even for a late dinner. The room is lit up with floor to ceiling windows and patios overlooking the water, featuring Stanley Park and coastal mountain views. Lift offers Vancouver’s only waterfront rooftop deck which offers all-season possibilities as it has an enclosed canopy. The food is great, the cocktails are even better and the service is accommodating. What more can you ask for? Visit here
9) HONEY SALT AT PARQ CASINO
Honey Salt is also a newbie as it is found in the Parq Casino; it’s very cute and chic with a comforting touch. It has welcoming home-style atmosphere featuring farm to table cuisine with an emphasis on locally and regionally sourced ingredients. It is owned by renowned restaurateur Elizabeth Blau and her husband, award-winning Chef Kim Canteenwalla. Armed with with a mission to bring the freshest possible products to the menu, I chose the Grain Power Salad and it did indeed live up to its goal. Because we were there celebrating a birthday, I followed the sensible healthy option with a potent James Franco shot! Visit here
We couldn’t talk about chic restaurants without mentioning one of our all-time favorites, Chambar. An all brick space with creative pops colour, Chambar’s food is art and the drinks are well crafted. It’s easily one of the best brunch spots in town but we never skip out on a dinner opportunity either. Visit here
